There was one that I saw as a kid, where you get transformed to a vampire if you are bitten three times by the same vampire. The movie ends with the girl and Dracula flying away as bats. But I didn't seem to find out which movie this was.

Rings a bell.
If it had a comedy-aspect it might be "Love at First Bite". Can't recall the end right now, but the three bites are definitely true for this one.
Could be it. Thanks!

Another title that come to mind is Once Bitten, which has Jim Carrey in it. I haven't seen it myself, so I cannot comment on the plot.

I believe the theme of several bites being needed for transformation was at least used in Horror of Dracula, the original Christopher Lee film. Isn't it also used in Bram Stoker's Dracula by Coppola? I believe we also see Mina's friend hiding the bitemarks at first, while still being able to roam in daylight.

Dragonfire

Dracula and the woman flying off together as bats at the end sounds like Love at First Bite to me.
That doesn't happen in Once Bitten even though several bites are needed to fully turn vampire.  I can't remember any others ending that same way.
